This recently-opened restaurant celebrates the Japanese culinary tradition of omakase within a spectacular space where guests immediately feel transported to Japan. Most of the amazing staff relocated from Tokyo a few months ago for these roles. Attention to details is the highest with adjustments if guests are left-handed, fascinating anecdotes from Japan and true elegance.
This is a restaurant where culture and tradition align with perfection. The dominant materials surrounding diners are cedar woods punctuated by textures of bamboo, porcelain and aged granite. A carefully placed vase from the renowned ceramic artist Shiro Tsujimura, is arranged with grace at the back allowing to keep the food as the focus and simply adding light touches of colour.
Highlights from the stunning 18-course menu include sushi of sumiika with beluga caviar, hand roll of unagi kabayaki and negi toro maki. From beginning to end, it is a sensory experience including the delicious closing miso soup with chives.
Although key traditional ingredients are brought from Japan, Chef Kanesaka sources much of his fish from the rich streams, seas, and rivers of Europe (Portugal, Italy) and the UK (Wales and Scotland). He said: “By embracing the spirit of omakase, I’m free to select from the seasonal delights of Japan’s 72 micro seasons for my ingredients, and deliver something utterly fresh with every slice of my blade.”
Wooden kumiko panels echo shapes found amongst the landscape in Hyde Park. A nod to tradition lives on in the hinoki ice-chests, first used by sushi chefs in the Edo period and still treasured for their ability to delicately control the temperature of the fish. Beyond the quality of his ingredients, Chef Kanesaka assesses the maturity, temperature and humidity of his fish to ensure every mouthful is a moment of pleasure.
